Salmorejo

When I was in Spain i ate a lot of amazing tapas in different cities and bars. One of my favourite was Salmorejo, a cold tomato soup.

Back home the weather is hot, so a cold soup for lunch is perfect.


You need (for about 4 to 6 persons)
- 1,0 kg tomatoes
- half of an old baguette
- 1-2 cloves of garlic (depending on how "strong" you want it)
- salt and pepper
- herbs like basil, thyme, marjoram, etc.
- 1 tsp. of vinegar
- 8 tsp. of olive oil

for the topping hard boiled eggs or tuna or ham/prosciutto

So mix the tomatoes with salt, pepper, herbs, vinegar and the garlic in the mixer.
Then soak the old and hard baguette in the mixture and wait some minutes until it is soft and mix again. The put the oil in and mix it all again. Store in in the fridge until it is cold.

You can serve it with prosciutto and hard boiled eggs, or tuna and bread, whatever you prefer.
And then enjoy! :)

    1. It's sooo easy and not really cooking, just put everything in a food processor and enjoy :)
